Amani lemon is a dried fruit that is used as a seasoning in Middle Eastern cuisine, especially in Iran. Fresh Amani lemon has a mustard color and is very sour, so that its fresh usually cannot be consumed alone; So they dry it in the sun until it turns black inside. The color of its outer shell ranges from yellow-brown to black and it is used as a seasoning in food. Amani lemon is Supplied in powdered form or whole round.
Amani lemon plant is native to South Asia and is also cultivated in America and Latin America.This plant is widely planted in different regions of south and southeast of Iran such as Bandar Abbas, Roodan, Jahrom, Jiroft, Kahnooj and Shiraz.
Amani lemon has a sour taste like other citrus fruits, but it lacks the sweet aftertaste in fresh lemons. Also, due to the fermentation process, a little bitterness is felt in its taste.
